In Vino Venison
Chapelains Rouge
A supple and delightful claret from the little known appellation of Sainte Foy - a real find and one you will enjoy. Good fruit and not too much of that drying nature you so often find on so many Bordeaux.
Tasting Notes:
Deep black in colour, with a full nose of red and black fruits. The palate is soft at first, becoming full and round with a delicate touch of sweetness. The finish is long, with soft tannins accompanying flavours of cherries and blackberries.
Method of Production:
Environmentally conscious cultivation methods (culture raisonée) are used in the vines, with minimal intervention only when needed. Only organic fertilisers and non-residual weed killers are used. Grapes are machine-harvested and a sorting table used to assure quality before maceration in stainless steel vats for a week. Fermentation is carried out at low temperatures and the wine is matured under a micro-oxygenation system to conserve the full fruit flavours of the individual grape varieties.
